This limited edition micro-lot, run of 200 comes to you from legendary producer Diego Robelo in Costa Rica. 

The roastery have chosen to profile this coffee for filter only and will only be available as beans.

Thermic Fermentation processing at Aquiares begins with sorting the freshly harvested cherries via flotation. The dense fruit is then wrapped in heat-capturing heavy duty plastic that is sealed so that no oxygen can enter. These wrapped cylinders are then placed into the greenhouses where they are heated by the sun to promote thermophilic fermentation. They are kept like this for 3 days, then given 15 days of drying.

Centroamericano H1 is an F1 hybrid variety generated by crossing the Sarchimor T-5296 and a wild Rume Sudan variety. It is reproduced through a tissue culture cloning process called somatic embryogenesis. This cultivar has been distributed among coffee producers in Central America over the last decade.
