Finca Chambaku is a new project of the Restrepo family. The area of the farm is 12 ha. Juan Felipe, the local Q grader, cooperates with Finca Chambakú, which pushes them forward very fastly.
This coffee is a blend of 10 different lots, anyway the rules for the harvesting were the same for each of them - picking ripe cherries only and the Brix reading between 18,5 and 20. In the cup, this coffee is really complex with the sweetness of dried figs and chocolate body.
