This coffee was anaerobically fermented for 24-48 hours at a lower temperature before being pulped. After this are the beans placed into the buckets where the coffee ferments without oxygen. To the buckets are added microorganisms (lactic acid bacteria) and left for 48 hours. After this fermentation, the coffee is dried in parabolic dryers.
