Café Granja la Esperanza is a producer, who owns 5 very well known farms in Colombia - Las Margaritas, La Esperanza, Cerro Azul, Hawaii and Potosi. This coffee is interesting in the processing method. It is a natural process, but very controlled and innovative, because after the harvest, cherries are sorted and then fermented for 15 hours in a controlled temperature. Then are moved to the dehumidifier for another 72 hours to be fully dried. This processing method is consistent because the final flavour of the cup is not affected by the weather and the air temperature during the processing.

The variety, Colombia, is a hybrid of Caturra and Timor hybrid. Timor hybrid has a lot of its genetic information taken from robusta, so it is disease resistant and high yielding.
