Fernando Cordero is a long-term producer of specialty coffee that has high quality. His fields are full of Catuai Amarillo variety that grows in altitude 1 780 meters above sea level. After harvest, cherries go to the washing station Cordillera de Fuego. Owner Luis Campos started experimenting with thermal fermentation ten years ago. Just after five years, he decided that he achieved a great result, so he started to sell this coffee. The method starts with picking very ripe cherries because they have a lot of sugar. After this cherries go into a metal tank, where the oxygen has no access to them. The result is spectacular and the taste is very complex.
