The farm La Candelilla is located in Tarazu valley of the small town called San Marco and they are the first independent mill in Costa Rica, created in 2000's.
We are talking about one of the most innovative farms in Costa Rica. They keep on improving their skills and conditions for growing coffee. They use only organic fertilizers and every year they send a soil sample to the research centre to know the composition of minerals and compounds to make sure their soil is suitable for coffee trees.
Naturaly processed coffee is sun dried after picking on raised african beds or concrete patios. Thanks to this sugars and aromatic compounds from the pulp comes to the green bean and we can get more aromatic and sweet coffee. After drying the cherries are de-pulped and dried to the required moisture around 12 %.
