Tabe Burka mill is located near Suke Waraqata city in the Guji region. Cherries come from the local smallholders that grow their coffee nearby. Firstly, cherries are sorted by colour and then immersed underwater where are separated again, unripe cherries float, while ripe cherries sink, because of the different densities. Cherries are then depulped and ferments underwater for a few hours. Thanks to the fermentation, the rest of the mucilage left on the beans is removed. In the final stage, cherries are dried on raised African beds until they reach the required humidity (10-12 %).
