Heirloom is the term for indigenous coffee varieties of Ethiopia.
Naturaly processed coffee is sun dried after picking on raised african beds or concrete patios. Thanks to this sugars and aromatic compounds from the pulp comes to the green bean and we can get more aromatic and sweet coffee. After drying the cherries are de-pulped and dried to the required moisture around 12 %.
Thanks to the natural processing we can taste juicy notes of yellow fruits and high sweetness.
