Father's Roastery brings you great coffee from Las Moritas Farm. It's Pacamara variety and has been processed by the wet method. You can expect a clean cup of coffee with a good load of fruity flavours!

After picking the cherries are transported to the La Esperanza.  Cherries are peeled and fermented in tanks for 36 hours. The tanks here are heated with hot air, as the nights are very cold. Too low an air temperature can slow down or completely stop the fermentation of the coffee, so it needs a little help.

After fermentation, the coffee is washed and pre-dried in silos. It then goes into mechanical dryers, i.e. guardiolas. Here, it is dried to a moisture content in the lower tens of percentages. The final step is drying in direct sunlight, which takes place on concrete surfaces, known as patios.
