Cedros is a small cooperative with around 300 members in northern Peru. Peru has all the potential for producing high-quality specialty coffee, but in most cases, cooperatives still produce low-priced, bulk lots with no traceability, giving no chance to an outstanding small lot to shine through. The importer of this lot is looking for smaller farmers or producer groups. This lot is a blend of the coffee of 18 smallholders, which process the coffee themselves. The coffee is de-pulped, fermented for 15-45 hours, and then sundried for 12-25 days, depending on the weather conditions.
